Bolivian Recipes

Enjoy these delicious meal!!

Peanut Soup: For 8 servings

8 cups of beef broth (I usually make my own )
½ pound of lamb chops
Add salt, pepper and cumin at your taste
Blend in a blender ½ cup of raw peanuts and add to the broth. When you add the peanuts to the broth do not mix it until the broth boils again and let it cook for at least 1 hour, stirring it frequently.
After the hour you can add ½ a cup of rice and 1 cup of green peas.
Serve the soup with very small French fries

Quinua Dish: For 8 servings

Quinua (you can buy at Central Market or Whole Foods)

2 cups of quinua. Cook the quinua as you cook rice (but add salt after it is cooked)

Mix the quinua with 4 tablespoons of butter, 2 eggs , and ½ cup of milk or cream.
Add salt and pepper to you taste.

Prepare chicken or beef (ground) sauce.
1 chopped onion
½ cup chopped green peppers
½ cup chopped celery
½ cup chopped tomatoes
1 pound either ground beef or chicken
2 tablespoons parsley
1 cup cooked green peas
Salt and pepper to taste

Cook in olive oil the onions, green peppers, celery, tomatoes and parsley. Add salt and pepper and beef or chicken. If you want you can also add tomato sauce and parmesan cheese.

Oil or butter a rectangular baking dish.

Layer half of the quinua, spread the sauce and top with the remaining quinua. You can also put layers of parmesan cheese on top before you bake it for 15 to 20 minutes at 350 oven

Corn dish:

2 cans of corn (cream style)
2 small boxes of corn muffin mix (example: Jiffy mix)
4 eggs
½ pound of shredded muenster cheese
8 tablespoons of butter

Mix all the ingredients very well and bake it in a rectangular baking dish well buttered.

Oven: 350 degrees for 60 minutes.

Horchata

1 cup uncooked long rice
5 cups water
½ cup regular milk
½ cup evaporated milk                 .
½ tablespoon vanilla extract
½ tablespoon ground cinnamon
2/3 cup sugar


  • Pour the rice and water into the bowl, let it stand a night before.
  • Next day blend the rice and water for 2 minutes.
  • Strain the rice water into a pitcher and discard the rice.
  • Stir in the vanilla extract and cinnamon.
  • Add the regular milk, evaporated milk, and sugar into the rice water.
  • Chill and stir before serving over ice.

Español

1 taza arroz largo sin cocinar.
5 tazas agua.
½ taza leche regular.
½ taza leche evaporada.
½ cuchara extracto de vainilla.
½ cuchara canela molida.
2/3 taza azucar.

• Vertir el arroz y agua en una fuente, dejar reposar poruna noche.
• Al dia siguiente licuar el arroz y el agua por 2 minutos y colar (solo necesitas el agua del arroz).
• En un jarron mesclar la canela y la vainilla, añadir la leche regula,
leche evaporada, agua de arroz y azucar, mesclar bien todos los ingredients.
Antes de servir batir y servirlo con hielo.
